No-Bake Oatmeal Chocolate Cookies

Yields 16 cookies/ Serving Size: 1 cookie


¼ cup unsweetened almond milk

2 tblsp unsalted butter

¾ cup coconut sugar

2 tblsp cocoa powder

3 tblsp natural peanut or almond butter

¼ tsp vanilla

1 ¼ cup organic quick oats


1. In medium pot stir together almond milk, butter, coconut sugar and cocoa. Bring to a soft boil and let simmer for 2 minutes, stirring continuously (to dissolve sugar) and remove from burner.

2. IMMEDIATELY add nut butter, vanilla and oats. Stir until completely coated in the warm chocolate mixture.

3. Drop by the tablespoon onto parchment paper and allow to cool completely.
